Sometimes, I forget just how much I like to bake. Which sounds really silly because I bake weekly.
But I'm not talking about cookies.
I'm talking about cake. Not cake from a box, but cake from scratch. Which is even funnier, because I don't really even like cake. I'm an ice cream kind of gal.
But when you're getting some girls together for dinner, a movie, wine and pedi's...then cake just seems like a must do.
So I opted for my favorite chocolate coca-cola cake with chocolate coca-cola ganache.
This cake ranks at the top of my dessert list (other than ice cream!) I'm pretty sure it's because I don't care for buttercream and this ganache is the perfect combination of light, chocolately deliciousness.
The cake is light and fluffy, too.
It was also delightful to make a cake for friends.
There's a lot less pressure than when the baked goods are for a customer.
I'm not going to share the recipe, because honestly, all I did was google 'chocolate coca-cola cake' and used the first recipe that popped up. I was going for simplicity, so I just followed the recipe. Not much skill involved at all. I wasn't worried about icing the cake perfectly or having it be level, I just wanted to enjoy the act of baking and the end result.
